Chicken Wonton Soup
  1. Combine chicken, soy sauce, salt, sesame oil, ginger, chives and pepper in a bowl with a fork.

  2. Form wontons by placing a heaped teaspoon of filling in the center of a wonton wrapper, dampening the edges, folding, and sealing shut.

  3. Fix up the stock by simmering it with sliced ginger, scallions, garlic, and soy sauce or salt.

  4. Cook the wontons in the simmering broth or in simmering water for 3 minutes.

  5. Add spinach to the broth, then the cooked wontons, warm through, and serve with sesame oil, soy sauce, and scallion tops.
