Orange Cookies by Eileen

Cookies

  1. In a large bowl, cream together sugar and margarine, add egg and beat well. Stir in lemon extract and vanilla extract.

  2. In a separate bowl, mix flour, baking soda, baking powder and salt.

  3. Alternatively add about ⅓ of the flour mixture and ½ buttermilk to the wet mix and stir. Repeat. Mix in the last of the flour mixture and ⅓ cup of orange juice.

  4. Drop by teaspoons on slightly greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. ("Let them get just a very little bit brown. They get too dry if they get brown. I touch the top of cookies with my finger, and as soon as the dough doesn't dent, they are don." - Eileen's note)

  5. Remove from cookie sheet and cool on wire rack. Frost when completely cool. Store in freezer.

Frosting

  1. Beat ingredients together. Slowly add orange juice as you mix to get spreading consistency.
