Stuffed Sweet Potatoes
  1. Preheat your oven to 450°F.

  2. Slice the sweet potatoes in half lengthwise, drizzle with olive oil, and place cut-side down on a baking sheet.

  3. Roast for 25 minutes or until fork-tender and golden. Remove from oven and let cool slightly.

  4. In a large skillet over medium heat, add your ground beef. Season with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper.

  5. Cook, breaking it up with a spatula, until fully browned and cooked through. Remove from heat.

  6. Place roasted sweet potato halves on a plate or serving dish.

  7. Spoon over the seasoned ground beef.

  8. Add a scoop of cottage cheese to each, a few slices of avocado, a bit of pickled red onion, a small drizzle of honey, and sprinkle with Tajin.

  9. Enjoy warm, or store components separately in the fridge and assemble when ready to eat.
