Preheat your oven to 450°F.
Slice the sweet potatoes in half lengthwise, drizzle with olive oil, and place cut-side down on a baking sheet.
Roast for 25 minutes or until fork-tender and golden. Remove from oven and let cool slightly.
In a large skillet over medium heat, add your ground beef. Season with salt, garlic powder, smoked paprika, cumin, chili powder, and pepper.
Cook, breaking it up with a spatula, until fully browned and cooked through. Remove from heat.
Place roasted sweet potato halves on a plate or serving dish.
Spoon over the seasoned ground beef.
Add a scoop of cottage cheese to each, a few slices of avocado, a bit of pickled red onion, a small drizzle of honey, and sprinkle with Tajin.
Enjoy warm, or store components separately in the fridge and assemble when ready to eat.
