Use a food processor: Mix flour and salt, add cubed butter and pulse until crumbly. Add egg and water gradually until a clumpy dough forms. (Or mix by hand.)
Knead briefly into a ball, flatten into disks, and chill in the fridge for 30+ minutes.
Roll out on a floured surface and cut into circles for filling.
Fill with Amy's Kitchen Organic Black Bean Chili, leftover potatoes, cilantro and cheddar.
Bake or fry (air frying too).
