Black Bean Chili Empanadas
  1. Use a food processor: Mix flour and salt, add cubed butter and pulse until crumbly. Add egg and water gradually until a clumpy dough forms. (Or mix by hand.)

  2. Knead briefly into a ball, flatten into disks, and chill in the fridge for 30+ minutes.

  3. Roll out on a floured surface and cut into circles for filling.

  4. Fill with Amy's Kitchen Organic Black Bean Chili, leftover potatoes, cilantro and cheddar.

  5. Bake or fry (air frying too).
