Jack O Lantern Stuffed Peppers
  1. Label: Rinse rice and combine with lentils and TVP in saucepan. Cook until water absorbed.

  2. Label: Preheat oven to 375°F. Sauté onion in oil until softened. Add garlic and mushrooms, then tomato.

  3. Label: Stir in cooked lentil mixture, nutritional yeast, soy sauce, herbs, and corn. Season and mix.

  4. Label: Slice tops off peppers, remove seeds, carve faces. Keep features small for structure.

  5. Label: Grease dish, stuff peppers, bake 1 hour until soft and tops crisped.
