Homemade Spaghetti Sauce

    I made this sauce from scratch the other day. I filled a 7.5 Quart cast iron pot, so this makes a lot of sauce. I usually freeze the leftover sauce to enjoy at another time.

  1. Start browning Ground Beef and Sausage In a large heavy-bottomed stock pot 7.5 Quart or larger over medium heat, Stirring occasionally.

  2. While Meat and Pork are browning, Add Olive oil to Small frying pan using medium to high heat. Add finely Chopped Carrots and cook for about 5 minutes or until Carrots are sticking to the bottom. Deglaze with Wine, and cook until Wine has evaporated. Stirring frequently.

  3. While Meat and Pork is browning, about ½ browned, Add Onions, Pepper and salt. stirring occasionally.

  4. When browned, drain excess grease from pot

  5. Add Carrots and Garlic and stir till Garlic is fragrent, about 1 minute.

  6. Add Italian Seasoning and Stir in well

  7. Add Tomatoes, and Tomato Paste Stirring well to incorporate into Meat mixture.

  8. After 20 Minutes, Add Frozen Meatballs

  9. Let simmer for 3 hours, stirring occasionally. I usually stir when the sauce is bubbling to keep down splatter on the stove.

  10. During Simmer time. Add Sugar to sauce

  11. Absolutely taste test Sauce through simmer and adjust your spices to your taste. Just remember patience. Sometimes it takes time for the flavors to come together.
