Preheat the oven to 375 degrees.
Combine gluten free flour, oatmeal, sugar, salt and flax/chia meal in large bowl.
Mix in coconut oil, pumpkin and pumpkin spice.
Add coconut milk and mix well until fully combined.
Fold in the additional add-ins (nuts, dried fruit and chocolate chips) until mixed.
Use a spoon to place dough on a parchment lined baking pan.
Bake for 20-22 minutes or until puffy and golden.
Cool for 5 minutes before enjoying.
