Bombay-style Potatoes With Brandt & Levie Vegetable Sausage
  1. Boil the potatoes in salted water until just tender, let them steam dry, and cut into large chunks.

  2. Heat a generous splash of oil (sunflower/rapeseed/mustard) in a pan and fry the potatoes over low heat for about 10 minutes.

  3. Add the spices (except the garam masala) and fry for another 5 minutes.

  4. Add the garlic, green chili, and garam masala and fry for 2 more minutes, stirring constantly.

  5. Let them get crispy, then add the tomato and ginger. Let everything become nicely 'mushy' and season with salt.

  6. Fry the Vegetable Sausages in a separate pan until golden brown.

  7. Serve with a generous dollop of (coconut) yogurt and chopped coriander.
