Wrap the 12 corn tortillas in a dish towel and sprinkle the towel lightly with water on the top and bottom. Heat in microwave for 1 minutes.
Dip each tortilla in enchilada sauce. Place 2-3 tablespoons of ground turkey down the center. Layer cheese, onions, tomato and bell pepper and roll up to form enchilada. Place in a greased 9x13. Repeat for remaining tortillas.
Pour remaining sauce over the top of enchiladas.
Sprinkle ½ cup shredded cheese over the top.
Bake at 375 degrees F for 20-30 minutes until heated through and cheese is melted.
Garnish with cilantro, olives tomatoes or whatever you want.
