Cantucci Cookies
  1. Brush the steak with olive oil.

  2. In a bowl, mix flour, yeast and sugar. Make a volcano.

  3. Crack one egg and add to the crater, followed by the honey.

  4. Mix egg and honey first, then slowly incorporate flour.

  5. Add almonds to your liking, mix everything into a soft dough.

  6. Transfer to a floured surface. Use a scraper to knead: scoop, press, fold. Add flour if sticky.

  7. Roll the dough gently into a 'sausage' shape about 5cm in diameter.

  8. Place on a baking tray covered with a baking sheet.

  9. Beat your second egg and brush the top of the log. (You can sprinkle a little sugar on top, we know you want to)

  10. Bake at 160°C (320°F) for 12 minutes (first bake).

  11. Let cool. Then cut into diagonal slices (+ 2 cm thick).

  12. Bake the slices again for 10 minutes until crisp and golden.
