Brush the steak with olive oil.
In a bowl, mix flour, yeast and sugar. Make a volcano.
Crack one egg and add to the crater, followed by the honey.
Mix egg and honey first, then slowly incorporate flour.
Add almonds to your liking, mix everything into a soft dough.
Transfer to a floured surface. Use a scraper to knead: scoop, press, fold. Add flour if sticky.
Roll the dough gently into a 'sausage' shape about 5cm in diameter.
Place on a baking tray covered with a baking sheet.
Beat your second egg and brush the top of the log. (You can sprinkle a little sugar on top, we know you want to)
Bake at 160°C (320°F) for 12 minutes (first bake).
Let cool. Then cut into diagonal slices (+ 2 cm thick).
Bake the slices again for 10 minutes until crisp and golden.
