Corn & Coconut Noodles With Halloumi
  1. Add a little oil to a pan and fry the halloumi over a medium heat until crispy.

  2. Remove then add in the garlic and ginger and fry for 3 minutes before adding in the curry paste.

  3. Cook for another 3 minutes then add the corn, noodles and water.

  4. Cook until most of the water has evaporated and the noodles have softened enough to break apart.

  5. Add in the coconut milk and simmer until the noodles are fully cooked.

  6. Top with the mint, chilli & halloumi and enjoy!
