Use a vegetable peeler to remove the peel from the lemons in wide strips.
Place the lemon peels in a large bowl and add 1 cup of sugar.
Massage the mixture with your hands for a minute or two.
Cover the bowl and let it sit at room temperature for at least 3 hours, up to a whole day.
After the mixture has sat, cut the lemons in half and squeeze them to get about 1½ cups of lemon juice.
Pour 6 cups of water into the bowl with the oleo-saccharum and stir to dissolve any remaining sugar.
Strain the mixture into a large pitcher or jar.
Add the lemon juice and stir well.
