Garlic Herb Roasted Chicken & Vegetables
  1. Preheat oven to 400°F (200°C).

  2. Add potatoes, carrots, and red onions to a large baking tray.

  3. Drizzle with 1 tbsp olive oil, salt, pepper, and a pinch of oregano. Toss and spread evenly.

  4. In a bowl, combine olive oil, mustard, garlic, lemon juice, oregano, thyme, paprika, salt, and pepper.

  5. Rub the marinade all over the chicken thighs, coating well.

  6. Place the chicken on top of the vegetables.

  7. Bake for 35–45 minutes, or until chicken is fully cooked and skin is golden and crispy.

  8. Stir vegetables halfway through for even roasting.

  9. Garnish with fresh parsley.

  10. Serve hot with rice, salad, or bread.
