In a bowl, combine tuna, sriracha, soy sauce, and mayo. Taste and adjust seasoning if needed.
Fill a wide bowl or plate with cold water. Dip each rice paper sheet in for a few seconds until soft but not falling apart. It’ll keep softening as you build.
Now it’s time to build the rolls! On a flat surface, lay down the softened rice paper. Stack in the center: a square of seaweed, a spoonful of rice, spicy tuna, avocado, cucumber, and mint. Fold in the sides and roll it up tightly like a burrito. Double wrap with another rice paper sheet if needed for extra crunch/stability.
Air fry at 400°F for 10 minutes per side, 20-25 minutes total, or until golden and crispy.
While those are cooking, whisk all sauce ingredients in a small bowl.
Let the spring rolls cool, then, drizzle with chili oil, sprinkle with sesame seeds, and dip into that tangy-spicy sauce. Enjoy!!
