Line a small baking sheet with parchment paper. Combine ¾ cup puffed quinoa and ½ cup peanut butter in a medium bowl. Using a tablespoon, place 12 rounded tablespoons of the mixture on the prepared baking sheet.
Microwave ¼ cup chocolate chips in a small microwave-safe bowl on High in 30-second intervals, stirring thoroughly between intervals, until melted and smooth, about 1 minute.
Drizzle 1 teaspoon melted chocolate over each ball. Sprinkle the balls with a pinch of salt, if desired. Freeze until the balls are firm and the chocolate is set, about 30 minutes.
