Mix together lukewarm water, milk, sugar, and yeast. Let it activate.
Sift flour, add salt, then combine with yeast mixture to form dough. Knead until smooth.
Leave the dough to prove until doubled in size.
Prepare the filling by combining coriander, mint, spring onions, olives, hellim, and caramelised onion.
Shape the dough, fill it with the prepared filling, fold to encase, and mix everything well.
Coat the dough with sesame seeds, nigella seeds, and aniseed mixture.
Brush with flour-water-milk paste, coat with seeds, cut into segments, and let it prove again.
Bake until golden brown and cooked through.
Allow to cool on a wire rack before serving.
