Apple, Carrot And Walnut Loaf
  1. Blend the oil and eggs then mix in the dry ingredients.

  2. Add the carrot, apple, sultanas and walnuts and stir through.

  3. Spoon into a well-greased loaf tin (put some greaseproof paper in the bottom or it will stick!)

  4. Bake at 160oC for 90 mins (or until you can insert a knife and it comes out clean).
