Make the Sesame Dressing: Combine ¼ cup Light Soy Sauce, 2 tsp Chinkiang Vinegar (or sub with rice wine vinegar), 2-8 tbsp Chili Oil/Crisp (use your judgement), 1 tsp Sichuan Peppercorn Oil, ½ cup Tahini/Sesame Paste (use your judgement), and 1-2 grated Garlic Cloves.
Toss the Edamame, White beans, Red Cabbage, Red Bell Pepper, Avocado, Scallion greens, and Cilantro with the Sesame Dressing.
Optionally, top with Chili Flakes and White & Black sesame seeds.
