Dice all the ingredients. Add olive oil to a pan and saute the onions + celery with some salt. Add all of the diced vegetables to the pan along with the herbs, spices and tomato paste (don't add the garlic just yet), mix and leave to cover on a low heat until vegetables are soft. Lastly add the grated cloves of garlic and cook through for a few more minutes.
Melt butter in a pan and add flour, saute for a few mins, then slowly add milk + water, mixing well in-between each addition. Lastly add cheese, sage, salt and white pepper. Leave covered to prevent skin forming.
Divide the bolognese into two halves, layer one half with lasagne sheets and half the cheese sauce. Add the remaining bolognese and repeat, finish off with grated cheddar cheese. Bake in a hot oven at 200°C, 400°F, gas mark 6 for around 30 - 35 mins. Enjoy!
