Avgolemono Soup
  1. In a pot, cook rice in broth until tender. Add chicken and keep warm.

  2. In a bowl, whisk eggs and lemon juice. Gradually temper with a ladle of hot broth.

  3. Slowly stir egg mixture into soup. Do not boil.

  4. Season with salt and pepper, garnish with parsley, and serve.
