Chocolate Cream Pie
  1. Heat oven to 350 degrees

  2. Put Oreos in a food processor and pulse until texture of sand

  3. Add melted butter and pulse until combined

  4. Transfer to pie dish and press Oreos onto surface until even crust is formed

  5. Bake crust for 15 minutes and let cool

  6. Whisk together egg yolks, half & half and cream in a large bowl and set aside

  7. Add sugar, cocoa powder, salt and corn starch to a tall sided pan and whisk together

  8. Turn heat to medium low and add liquid egg mixture

  9. Whisk to combine and stir continuously until mixture comes to a soft boil and becomes thick, about 10 minutes

  10. Remove from heat and add chocolate and vanilla extract, stir until melted

  11. Add butter and mix

  12. Pour filling into pie crust and cover with plastic wrap directly on top of filling

  13. Chill in refrigerator for at least 8 hours

  14. Combine cold heavy cream, sugar and vanilla bean paste in mixer

  15. Beat with whisk attachment until whipped cream forms, about 2 minutes

  16. Serve whipped cream on top of pie and add chocolate shavings if desired
