Combine tahini, fresh ginger, garlic, soy sauce or tamari, lime juice, broth or water, miso paste, sriracha, and honey or maple syrup to make the sauce
Cook glass noodles or preferred noodles according to package directions
Heat toasted sesame oil in a pan and cook tofu until golden
Add bell pepper, scallions, and baby bok choy to the pan and stir-fry until tender
Combine cooked noodles with the vegetables and tofu
Pour the creamy miso sauce over the noodles and toss to combine
Serve immediately
