Parsnip And Carrot Colcannon With Miso Butter
  1. Prepare parsnips, carrots, potatoes, leeks, and cabbage or kale

  2. Boil and mash the potatoes with parsnips and carrots

  3. Mix in the leeks and cabbage or kale

  4. Transfer to a serving dish

  5. Top with a slab of miso butter in the centre

  6. Allow the butter to ooze down the sides as it melts

  7. Serve piping hot
