Preheat oven to 425 degrees F.
Wash potatoes and cut them in half. Score them into a diamond shape.
Toss potatoes with olive oil, parsley, garlic powder, and salt.
Grate parmigiano reggiano cheese. Mix with melted butter to form a paste.
Spread cheese mixture in a baking dish and press potato halves into it, cut side down.
Bake for 25-26 minutes.
Let potatoes rest for 10 minutes to harden cheese, then remove from pan and break into pieces.
