Prawn Finger Sarnie
  1. Get your peas cooking as per pack instructions

  2. Crack an egg into a deep plate and whisk. In a separate plate pour in the breadcrumbs.

  3. Tip the prawns into the egg and use two spoons to coat them all evenly.

  4. Once coated, add the prawns to the breadcrumbs and toss until evenly coated.

  5. Pour neutral cooking oil into a frying pan so that it covers the base and is around 1cm deep. Heat over a high heat.

  6. Once the oil is hot, fry the prawns for 3 mins on each side, until golden brown and cooked through.

  7. Whilst the prawns are cooking, blitz up the peas and mint in a food processor - season with salt and pepper.

  8. In a bowl, mix the mayonnaise, capers, cornichons, parsley, chives and lemon juice.

  9. Coat the base of your bap with the blitzed peas, and the top with the mayonnaise. Pile high with prawns and finish off with some flakey sea salt. Enjoy!
