Line a loaf pan or 8x8 brownie pan with parchment paper. Set aside.
Add the peanut butter, coconut oil, and maple syrup to a mixing bowl. If needed, microwave in 15- second increments to melt down. Whisk until it’s a smooth mixture.
Fold in the peanuts, then transfer to the lined pan, spreading out evenly. Freeze for at least 45 minutes to set. Cut into 8-9 even squares and keep frozen until enjoying.
