Homemade Fruit Tarts
  1. Mix the dry ingredients (flour, powdered sugar, salt) with your fingers.

  2. Move the mixture to a mixer and chop 8 tbsp of butter.

  3. Mix on low speed until it has a crumbly texture.

  4. Add 1 egg and vanilla extract and mix until smooth and uniform.

  5. Chill the dough.

  6. Make the pastry cream by whisking 5 egg yolks, ½ cup sugar, 3 tbsp cornstarch, a tiny pinch of salt, and 1 tsp vanilla.

  7. Heat 1 cup heavy cream and 1 cup whole milk on medium heat, whisking until thickened, about 2 minutes.

  8. Roll the dough out to ¼ inch thick and fit it into tart molds, docking the middle so it doesn't rise unevenly.

  9. Bake the tart shells until light golden.

  10. Fill the tart shells with the pastry cream and top with fruit like blueberries and raspberries.
