Add the grated carrot and apple into the bowl, along with the chopped dried apricots and raisins. Stir to combine.
In a separate bowl, combine the blended oats, baking powder, and cinnamon. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
Pour the mixture into your prepared baking dish and smooth the top with a spatula. Bake for 30-40 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
