In a bowl, whisk together bourbon, soy sauce, brown sugar, garlic, and ginger.
Add chicken to a slow cooker and pour the bourbon mixture over the chicken.
Cover and cook on low for 4 hours.
In a small bowl, mix water and cornstarch until smooth. Stir the cornstarch mixture into the slow cooker and cook on high for an additional 20-30 minutes or until the sauce thickens.
