Za’atar Bean Salad
  1. Combine the red onion and salt in a small bowl. Let sit for 10 minutes to soften.

  2. In a large bowl, combine the lemon zest, drained beans, shredded chicken, chopped olives, Parmesan cheese, and parsley.

  3. Add the softened red onion (discarding any liquid).

  4. In a small bowl, whisk together the lemon juice, olive oil, and za’atar seasoning.

  5. Pour the dressing over the salad and toss to combine.

  6. Season with fresh black pepper to taste.
