  1. Using a food processor grind ½ cup of raw blanched marcona almonds until coarsley chopped (you can also add the almonds into a plastic bag and pound on them with a pestle)

  2. Remove the core from 1 large granny Smith apple, cut the apple into ½ inch cubes and add to a large bowl, add 1 tsp of fresh lemon juice into the cut apples, ½ tsp cinnamon powder, 2 tbsp white sugar, 1 tbsp all-purpose flour and the chopped almonds, mix together until well combined

  3. Grab a store bought pre-made pie crust, using a circular cutter (mine was 3 ½ inches in diameter) cut circles out of the dough, you should end up with 6 individual circular doughs

  4. Spray a 6 count muffin tin with some non-stick spray and mold each of the circular doughs into each muffin hole, then evenly divide the apple mixture into the doughs

  5. Add into a preheated oven, bake + broil option 210 C - 410 F between 16-18 minutes, after the baking time remove from the oven and let them rest until cool enough to handle, sprinkle each mini apple pie with powdered sugar and serve at once, enjoy!
