Working in batches of about 4 fritters at a time, scoop about ¼ cup batter using 1 metal spoon, and slide into hot oil by pushing off with another metal spoon. Fry until golden brown on both sides, about 3 minutes total, flipping once halfway through cooking time. Remove fritters from hot oil using a slotted spoon or spider; transfer to wire rack-lined baking sheet, and let cool slightly.
While fritters cool, prepare the Cider Vinegar Glaze Stir together powdered sugar, milk, cider vinegar, vanilla extract, and ginger in a medium bowl until smooth. Drizzle over warm fritters, and serve immediately.
