Crispy Sweetcorn Chipotle Chicken Salad
  1. Season chicken with paprika and garlic granules. Spray with oil and air fry or cook in the oven at 180°C for 15-20 minutes. Chop into chunks once cooked and cooled.

  2. Place corn in a lined air fryer, season with salt and pepper. Spray with oil and air fry at 180°C for 15-20 minutes until charred and crispy.

  3. Remove seeds from the cucumber and finely dice along with red onion and parsley.

  4. For the dressing, mix all the ingredients together.

  5. Add the cucumber, red onion, chicken, parsley, half of the feta cheese, 1 tbsp of parmesan, half of the crispy corn and the dressing. Toss together.

  6. Serve in a bowl, top with the remaining feta, corn and 1 tbsp of parmesan. Enjoy on it’s own or with some tortilla chips on the side.
