Mix the all purpose flour and 0% greek yogurt together and knead until you get a smooth ball.
Flatten the dough and divide into eight equal size portions, rolling each into a ball.
Press out the dough as thin as possible, especially the edges.
Add a spoonful of the filling (93% beef, light mayo, cheddar cheese, diced tomatoes, pickled jalapeños) to the center of each dough round.
Bring the corners of the dough together, pinching them as you go to seal the hot pocket.
Add the sealed hot pockets to a nonstick skillet and cook for 5-6 minutes on each side until golden brown and cooked through.
Freeze the cooked hot pockets and microwave for 2-3 minutes when ready to eat.
