Baked Garlic Parmesan Shrimp Tortilla Roll-ups
  1. Preheat the oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.

  2. Heat the olive oil in a large skillet over medium-high heat. Season the shrimp with ¼ teaspoon of the kosher salt, the black pepper, and the paprika.

  3. Cook the shrimp for 60 to 90 seconds per side, just until opaque, pearly-white, and barely cooked through. Remove them as soon as they curl into a loose C shape. Do not brown them because they will heat again inside the roll-ups.

  4. Transfer the shrimp to a cutting board and let cool for a few minutes, then chop into small bite-size pieces.

  5. In a mixing bowl, stir together the softened cream cheese, mozzarella, ½ cup Parmesan cheese, minced garlic, 2 tablespoons parsley, lemon zest if using, and the remaining ¼ teaspoon kosher salt.

  6. Fold in the chopped shrimp. The filling should be thick, creamy, and spreadable, not runny.

  7. Warm the tortillas briefly until flexible. Microwave them in a clean kitchen towel for 20 to 30 seconds, or warm them one at a time in a dry skillet.

  8. Keep the warmed tortillas covered while you assemble the roll-ups.

  9. Place one tortilla on a work surface. Spread a portion of the shrimp filling over the tortilla, leaving a small border around the edges.

  10. Roll the tortilla snugly, but not so tightly that the filling squeezes out. Place seam-side down on the prepared baking sheet.

  11. Repeat with the remaining tortillas and filling.

  12. Bake the roll-ups for 10 to 12 minutes, until the tortillas begin to feel set and the filling is hot.

  13. Stir the melted butter with the grated or minced garlic. Brush the tops of the roll-ups lightly with the garlic butter and sprinkle with the 2 tablespoons Parmesan cheese reserved for finishing.

  14. Return to the oven for 4 to 6 minutes, until the tops are lightly golden and the roll-ups are heated through.

  15. Let the roll-ups rest for 5 minutes before slicing. This helps the filling settle and makes cleaner pieces.

  16. Slice each roll-up in half on a slight diagonal. Sprinkle with the 1 tablespoon parsley reserved for finishing and serve warm.
