Corn And Tuna Fritters With Chili Jam
  1. Combine 420g corn kernels and 185g tuna in a bowl

  2. Add 3 finely chopped garlic cloves and ½ finely diced red onion

  3. Mix in 1 tsp paprika, ½ tsp dried oregano, and ½ tsp dried basil

  4. Season with salt and pepper to taste

  5. Add 120g flour and 2 eggs to the mixture

  6. Fold in a handful of finely chopped fresh parsley

  7. Form into fritters and cook until golden

  8. Serve with chili jam
