Combine 420g corn kernels and 185g tuna in a bowl
Add 3 finely chopped garlic cloves and ½ finely diced red onion
Mix in 1 tsp paprika, ½ tsp dried oregano, and ½ tsp dried basil
Season with salt and pepper to taste
Add 120g flour and 2 eggs to the mixture
Fold in a handful of finely chopped fresh parsley
Form into fritters and cook until golden
Serve with chili jam
