In a mixing bowl, toss together ground pork, cauliflower rice, green onions, ginger, garlic, sesame oil, rice vinegar, maple syrup, MSG, and white pepper.
Using your hands, mix everything together until all components are combined; set aside.
On your stove top, set steamer rack into a pot and pour water up to the height of your steamer rack; bring the water to a gentle boil.
Set up your assembling station with the pork mixture, baking dish, a small bowl with water, and wonton wrappers.
Quickly dip each wonton wrapper into the water bowl and cover the base of baking dish with wetted wonton wrappers (overlapping to fit wrappers into the dish is ok!).
Spread a thick layer of pork mixture on top of the base layer of wonton wrappers.
Repeat steps 5 & 6 until you reach the top of the baking dish or run out of ingredients, making sure the very top layer is wonton wrappers.
Pour chicken stock onto the very top layer of wonton wrappers.
Transfer baking dish to the steamer pot and cover; steam for 25 minutes.
Once cooked thoroughly, top it off with dumpling sauce and more green onions if desired.
