Quick Lemon Pudding Bundt Cake
  1. Preheat the oven to 350 F. Spray a 10 cup bundt pan heavily with baking spray.

  2. In the bowl of a hand or stand mixer fitted with the paddle attachment add the dry cake mix and lemon pudding powder and mix on low speed for 30 seconds.

  3. Add the lemon zest, ½ cup water, ½ cup lemon juice, and 4 eggs. Mix on low -medium speed for 1 minute. Add ½ cup oil and mix again.

  4. Fill the prepared bundt cake pan with batter. Bake for 35 mins.

  5. Cool for 10 mins then flip over onto a cooling rack to cool completely.

  6. Mix the ½ cup confectioners sugar with 1 tbsp cream and ½ tsp lemon zest until fully combined.

  7. Drizzle over cooled cake.
