Vegan No Sugar Ice Cream
  1. Soak cashews and dates in 1 ½ cups water overnight. Refrigerate coconut milk can.

  2. Reserve ½ cup soaking water. Scoop coconut cream from chilled can.

  3. Blend cashews, dates, vanilla, reserved water, and coconut cream until smooth.

  4. Pour into ice cream maker, churn 45 minutes.

  5. Freeze 2 hours for firm scoops. Enjoy.
