Thinly slice the large red onion
Finely chop the parsley
Combine the sliced onion and chopped parsley in a bowl
Add 2 tsp sumac and a pinch of salt
Squeeze the juice from half a lemon over the mixture
Drizzle with 2 tbsp olive oil
Add chili flakes if desired
Mix well and serve with shawarma, grilled meat, wraps, salads or kebabs
