Preheat oven to 375°F (190°C) and lightly grease a muffin tray.
Roll out the puff pastry on a floured surface. Sprinkle evenly with sea salt, black pepper, and thyme or oregano if using.
Spread crumbled feta evenly across the puff pastry, then drizzle 3 tbsp of honey over the top.
Roll up the puff pastry tightly like a cinnamon roll. Slice into 1-inch thick rounds.
Place each round into the muffin tray, flat-side down.
Bake for 15-20 minutes or until the pastry is golden and puffed up.
Drizzle with honey immediately after baking and sprinkle sesame seeds over the top.
