Add the coconut milk, vanilla, cinnamon, salt, yogurt, maple syrup to a large bowl and whisk together.
Stir in the chia seeds.
Place in the refrigerator for 2 - 4 hours, stirring occasionally so the chia seeds don’t cake together at the bottom.
Divide the mixture into individual glasses and refrigerate, covered, until you’re ready to eat.
Top with fruit, nut butter, and/or granola.
