Quick Pickles

Pickled vegetables appear frequently as an accompaniment to many Mediterranean dishes. Not only do they add tanginess and crunch, but they are great for gut health too as vinegar helps to control blood sugar and decreases blood cholesterol.

  1. Put the grated carrot and sliced onion into a bowl. Add the vinegar, sugar, salt and coriander seeds and stir to combine.

  2. Set aside until needed.
