Blend the curry paste ingredients with a little avocado oil or olive oil until you have a paste.
To make the curry sauce, sauté the shallots, garlic, and ginger for a few minutes in a tsp of coconut oil until they catch some color.
Add the curry paste and simmer it for 2-3 minutes.
If using chicken, add it now and let it cook through. If not, add the coconut milk now.
Once simmering, add the veggies and let it simmer until cooked.
If adding prawns, add them now, cover, and let the steam cook them through.
Serve with brown rice.
