Season chicken breast well with salt, pepper, and your preferred seasonings
Add a bit of extra virgin olive oil to a pan and heat on medium
Add chicken to the pan and do not move it; let it cook for 5 minutes
After 5 minutes, flip the chicken
Add about 1 cup of water and cover the pan
Leave the heat on for 2 minutes (or 4 minutes if the pan is thin and chicken is larger)
Turn the heat off and let the chicken sit covered for 15 minutes without peeking
Remove chicken from pan and let rest for a few minutes before serving
