Green Onion Crackers
  1. In a bowl, combine 60 g milk, 30 g melted unsalted butter, and 2 g salt. Mix well.

  2. In another bowl, mix 150 g cake flour, 2 g yeast, and 1 g baking soda with a spatula.

  3. Add the wet ingredients to the dry ingredients. Mix until a lump forms.

  4. Cut 35 g of green onions (use only the green part) into small pieces. If using, add 10 g sesame seeds.

  5. Briefly knead the dough to incorporate the green onions and sesame seeds.

  6. Cover the dough with cling wrap and let it rest for 30 minutes.

  7. After resting, place the dough between two sheets of baking paper. Press lightly with your hands and then roll out into a rectangular shape. Aim for thin dough for crispy crackers.

  8. Use a crinkle cut knife to trim the edges for a neat appearance. Cut the dough into bite-sized pieces. Poke each piece with a fork to prevent puffing during baking.

  9. Preheat the oven to 170°C (338°F). Place the crackers on an oven pan lined with baking paper. Bake for 15 minutes or until golden brown and crispy.

  10. Let the crackers cool completely before serving.
