Marinate the Pork In a large bowl or ziplock bag, combine all marinade ingredients. Add the pork and mix well to coat. Cover and marinate in the fridge overnight.
Prepare the Skewers Soak wooden skewers in water for at least 2 hours to prevent burning. Thread the marinated pork strips tightly onto the skewers. Packing them closely helps keep the meat juicy during grilling.
Make the Glaze In a bowl, mix together all glaze ingredients until well combined. No need to cook—this glaze will caramelize directly on the grill.
Grill the BBQ Preheat your grill to medium heat. Grill the pork skewers for 12–15 minutes, turning every 4–5 minutes for even cooking.
Glaze and Finish Raise the heat to medium-high. Brush the skewers with the glaze and grill for another 1–2 minutes per side, letting the glaze slightly caramelize. Apply a second coat for extra flavor and color.
