Marinate shrimp in water, sugar, baking soda. Chill for 2 hours.

Mix dry flours and salt, add water, stir well. Let sit.
Prepare steaming setup. Steam shrimp 2 minutes.
Pour batter onto wet cloth in flat pan. Steam 2 minutes.
Quickly roll hot noodle sheet around 4 shrimp using scraper.
Cut rolls, drizzle with sauce, serve immediately.
