Creamy Roasted Tomato Soup
  1. Preheat oven to 425 degrees.

  2. Prepare your vegetables by cutting the onions in half and removing the skin and the ends. Cut the top of the garlic off so the tips of the cloves are exposed.

  3. Place tomatoes, onions and garlic in a large baking dish (9x13 works) and drizzle with olive oil and sprinkle with salt.

  4. Bake for 45 minutes or until everything is soft.

  5. Cut the vines off the tomatoes, if necessary, and add them to a blender along with the roasted garlic, onions and basil.Blend until completely smooth.

  6. Add tomato mixture to a large pot and stir in paprika, pepper, chicken broth and heavy cream.

  7. Serve immediately and top with more cream, olive oil, pepper and basil. Enjoy with a toasty grilled cheese!
