Heat oil over high heat in a large pot 12+ qt recommended)
Add onion, garlic, and 1 tsp kosher salt and cook stirring often for 10 minutes until onions are translucent.
Add zucchini and cook, stirring occasionally for 20 minutes.
Add cauliflower, stock, and garlic powder, cover and bring to a simmer.
Simmer for 1-½ to 2 hours.
Blend with immersion blender or conventional blender.
Adjust seasoning with kosher salt to taste as needed.
